Greek Style Lemon Roast Chicken

Whole roasting chicken seasoned with salt and pepper, fresh lemon juice and greek vinaigrette dressing.
Ingredients -
1 Whole Roasting Chicken (3-1/2 lb.)
Salt and Black Pepper
1 medium Fresh Lemon, washed, halved
1/2 cup Greek Vinaigrette Dressing
 
Preparation:

1. Preheat oven to 350 F.

2. Rinse chicken in cold water. Pat dry with paper towel.

3. Season chicken inside and out with salt and pepper.

4. Place chicken in baking dish.

5. Squeeze lemon juice from lemon halves into small bowl and mix with Greek vinaigrette dressing.

6. Place squeezed lemon halves inside chicken.

7. Drizzle lemon vinaigrette dressing mixture over chicken.

8. Insert meat thermometer one chicken’s thigh.

9. Bake 90 minutes or until chicken is cooked through. Meat thermometer reaches an internal temperature of 180 F.

Greek style vinaigrette dressings are readily available in most supermarkets and Greek specialty food stores.

Olive Oil Age
Olive oil does not improve with age. Olive oils over 1½ should be thrown away and certainly , so any oil that is older than 1½ years should not be purchased.
