Greek Style Grilled Halibut with Lemon and Oregano

 
Ingredients -
1/4 cup Fresh Lemon Juice
1-1/2 teaspoons Olive Oil
1/2 teaspoon Dried Oregano
1/4 teaspoon Coarse Salt, to taste
1/4 teaspoon Fresh Ground Black Pepper
4 Halibut Fillets (1-1/2 pounds total)
4 (1/4-inch thick) slices Red Onion
 
Preparation:

1. In a shallow bowl, combine the lemon juice, olive oil, oregano, salt and pepper and mix well.

2. Reserve 1 tablespoon of the mixture to the side.

3. Add the fish to the bowl and gently turn to coat.

4. Marinate the fish for 30 minutes.

5. Heat a grill pan over medium-high heat.

6. Spray olive oil cooking spray on the onions and grill for 5 minutes, or until translucent and cooked through.

7. Grill the fish in the same pan for 10 minutes, or until cooked through, turning once.

8. Transfer the onions and fish to a serving platter and drizzle with the reserved juice mixture.
