Greek Style Chicken with Lemon and Olives

 
Ingredients -

1/2 teaspoon Cinnamon
1/2 teaspoon Turmeric
1 (3 pound) Fryer Chicken
2 tablespoons Extra Virgin Olive Oil
1 Large White Onion, thinly sliced
(2-1/2 cups) Chicken Stock
2 Fresh Lemons, cut into wedges
1/2 cup Pitted Olives
1 tablespoon Clear Honey
4 tablespoons Fresh Coriander
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. In a large bowl, combine the cinnamon and turmeric.

3. Add the salt and pepper and rub the mixture all over the chicken.

4. In a large frying pan, add the oil and heat until hot.

5. Add the chicken and fry until golden brown on both sides.

6. Transfer the chicken to a glass baking dish.

7. Add the onions to the same fry pan and sauté for 3 minutes.

8. Pour in the stock and bring the mixture to a boil.

9. Pour the mixture over the chicken.

10. Cover with foil and bake for 30 minutes.

11. Take the chicken out of the oven.

12. Add the lemons, olives and honey.

13. Bake the dish for an additional 45 minutes, or until the chicken is done through.

14. Add the coriander and season to taste.

15. Serve immediately.
