Greek Spinach Quiche

Wonderful Greek quiche perfect for breakfast, brunch, lunch or dinner.
Ingredients -
Pastry for 9” Pie
3 Large Eggs, lightly beaten
1 cup Low-Fat 2% Milk
¼ cup Oleo, melted
2 tablespoons Flour
¼ teaspoon Salt
¼ teaspoon Pepper
3 tablespoons Grated Romano Cheese
dash Nutmeg
1 pound Frozen Spinach, chopped, thawed & drained
1 cup Feta, crumbled
 
Preparation:

1. Preheat oven to 350 F.

2. Place pie pastry into 9” pie or quiche pan.

3. Prick bottom and side of pastry with fork.

4. Bake pastry 7 minutes.

5. Whisk eggs in large bowl. Stir in milk, oleo, flour, salt, pepper, Romano cheese and nutmeg.

6. Stir in spinach and Feta cheese. Pour egg mixture into pie shell.

7. Bake 35 minutes. Let stand 10 minutes before slicing and serving.

Fresh baby spinach would be an acceptable substitute for the frozen.

When you buy Feta cheese in bulk, always make sure you have plenty of brine to store it in.
