Greek Shrimp Bruschetta

 
Ingredients -

1/3 cup Olive Oil, divided
3/4 pound Shrimp, small, peeled and deveined
1-1/2 tablespoons Garlic, minced
2 large Plum Tomatoes, seeded and finely chopped
1/2 cup Green Onion, sliced
1/2 cup Feta Cheese, crumbled
1/4 cup Parsley, finely chopped
1 tablespoon Fresh Lemon Juice
2 teaspoons Fresh Thyme, minced
1 teaspoon Greek Seasoning
1 Baguette, cut diagonally into 1/4 inch-thick slices

 
Preparation:

1. In a large skillet, heat 1 tablespoon olive oil over medium-high heat.

2. Add the shrimp and garlic and sauté until the shrimp are cooked which takes about 3 minutes.

3. Transfer the shrimp to a small bowl and refrigerate.

4. In a large bowl, add the tomatoes, olive oil, green onion, feta, parsley, lemon juice, thyme and Greek seasoning.

5. Add the shrimp and toss gently to combine.

6. Cover and chill until you are ready to serve.

7. Place the baguette on a cookie sheet and brush with olive oil.

8. Bake for 8 minutes at 375 degrees.

9. Heap a tablespoon with the shrimp mixture onto each slice of bread.

10. Serve.
