Greek Chicken Pita Sandwich

Marinated and grilled chicken breast mixed with Greek salad dressing, grape tomatoes, Feta cheese, cucumbers and black olives, and stuffed into pita rounds.
Ingredients -
6 Chicken Breast Tenderloins
5 tablespoons Greek Salad Dressing
3 cups shredded Lettuce
1/2 cup Grape Tomatoes, cut in half
1/4 cup crumbled Feta Cheese
1/2 Cucumber, peeled and sliced
2 tablespoons sliced Black Olives
4 tablespoons Greek Salad Dressing
4 Pita Rounds, cut in half
 
Preparation:

1. Add chicken breast tenders and Greek salad dressing to re-sealable bag.

2. Marinate tenders 30 minutes.

3. Preheat grill to medium heat. Grill tenders 4 minutes over direct heat. Turn grill 4 more minutes.

4. Place shredded lettuce, grape tomatoes, Feta cheese, cucumbers and black olives in a bowl and toss with remaining Greek salad dressing.

5. Dice cooked chicken and add to vegetable mixture.

6. Make a pocket in the pita halves and stuff with Greek chicken mixture.

Chicken Breast Tenderloins
Boneless, skinless chicken breast is a fine substitute for the tenderloins, when they are not available.
