Greek Broiled Shrimp

Wonderful appetizer or main dish. Shrimp combined with tomato sauce, dry white wine, lemon juice, oregano, topped with Feta cheese and broiled.
Ingredients -
1-1/2 pounds Uncooked Peeled Deveined Medium Shrimp, thawed if frozen
1 cup Winter Tomato Sauce ( see recipe )
1/4 cup Dry White Wine
2 tablespoons Lemon Juice
1-1/2 teaspoons chopped Fresh or ½ teaspoon Dried Oregano Leaves
1/4 cup crumbled Feta Cheese (about 2 ounces)
 
Preparation:

1. Preheat broiler.

2. Grease bottom and sides of 13 x 9 baking dish with shortening.

3. In medium bowl, combine shrimp, winter tomato sauce, dry white wine, lemon juice, and dried oregano.

4. Spread mixture evenly in baking dish.

5. Sprinkle with Feta cheese.

6. Broil 6 minutes or until shrimp are firm and pink.

7. Serve hot.

Large shrimp or prawns work well here in place of the smaller medium shrimp.
