Chicken Soulavi In Pita

Pita bread sandwiches. Seasoned chicken, onion, and tomatoes topped with a Feta cheese yogurt sauce.
Ingredients -
1 package Boneless, Skinless Chicken Breasts, cut chicken into 1-inch chunks
Salt and Pepper
2 teaspoons Vegetable Oil
1 medium Onion, halved and thinly sliced
2 medium Tomatoes, chopped
1 cup Plain Lowfat Yogurt
1/2 cup crumbled Feta Cheese (about 2 ounces)
1 tablespoon chopped Fresh Dill
4 large Pocket less Pita Breads, warmed
 
Preparation:

1. Season chicken breast pieces with salt and pepper.

2. Heat oil in a large skillet over medium high heat.

3. Saute chicken and onion 10 minutes, stirring occasionally.

4. Stir in chopped tomatoes. Heat through.

5. In medium bowl, combine low-fat yogurt, Feta cheese, fresh dill, until blended.

6. Spoon chicken mixture into pitas. Top with yogurt sauce and fold in half.

7. Serve immediately.

Fresh Feta cheese can be found in most delis. Many supermarkets stock Feta cheese with the other specialty cheeses.
